  • ½ lb Italian ground sausage
Vegetables
  • ½ cup yellow onion, chopped
  • 3 cloves garlic, minced
Condiments and Seasonings
  • 1 tsp olive oil
  • 3 tbsp tomato paste
  • 1 24 oz jar red pasta sauce or marinara
  • ¼ tsp red pepper flakes
  • ¼ tsp salt
  • ¼ tsp black ground pepper
  • ¼ tsp garlic powder
  • ½ tsp crushed, dried oregano
  • ½ tsp dried thyme
Liquids
  • 7 cup beef or chicken broth
Pasta
  • 9-10 pieces uncooked lasagna noodles, broken
Greens
  • 3 cup fresh baby spinach
Cheeses
  • ½ cup shredded parmesan
  • 1 cup fresh ricotta
  • 1 cup shredded mozzarella

Equipment

  • Dutch oven

Method

Cooking Instructions
  1. Break the lasagna noodles into 4ths and set aside. In a large dutch oven, brown the meat together on medium high, stirring often (about 8-10 minutes). Drain grease if necessary and set meat aside.
  2. Add the onions to the pot (using olive oil if needed) and sauté for about 5 minutes. Add in minced garlic and stir.
  3. Add tomato paste and let it cook for a minute before mixing it in for better flavor.
  4. Add seasonings, red pasta sauce, broth, and the browned meat. Bring to a low simmer.
  5. Add the broken lasagna noodles, cover, and maintain a rough simmer for about 20 minutes or until noodles are cooked to your liking.
  6. Add spinach last and let it wilt. If a more soupy mixture is desired, add extra broth.
  7. Stir in parmesan to the soup. Mix ricotta with shredded mozzarella in a small bowl.
  8. Serve the soup and dollop each bowl with the ricotta mozzarella mixture.
