Method
- Preheat the oven to 375° F and grease a 9-inch pie plate.
- Mix the water, strawberries, sugar, lemon juice, zest, salt, and vanilla extract in a pot over medium-low heat until the strawberries soften, about 4 - 5 minutes.
- Add cornstarch and continue cooking for 1 - 2 minutes or until the mixture gels together. Remove from heat.
- Prepare the pie plate with a bottom crust and pour the warm strawberry filling inside.
- Place another crust on top of the strawberries, cut the edges, and crimp the edges together. Make slits around the center of the pie to vent.
- Bake for 35 - 45 minutes or until the crust is golden brown.
- Whisk together the glaze until a thick but still drizzle-able paste forms. Drizzle the pie with royal icing after the pie has cooled completely, then sprinkle with sprinkles and let the icing set.
- Slice and serve!

Notes
Consider swapping fresh strawberries for other berries or jazzing up the glaze with almond extract for a delightful twist. Store leftovers in an airtight container in the fridge for up to three days.
