Ingredients
  

Fish
  • 4 fillets white fish (such as catfish, tilapia, or snapper)
Blackening Spice Mix
  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper adjust for spice preference
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper
  • 1 teaspoon salt
Cooking
  • 2 tablespoons butter for frying
  • 2 tablespoons olive oil for frying

Method
 

Prepare the Spice Mix
  1. In a mixing bowl, combine paprika, cayenne pepper, garlic powder, onion powder, thyme, oregano, black pepper, and salt. Mix well.
Season the Fish
  1. Pat the fish fillets dry with paper towels. Coat both sides of each fillet generously with the blackening spice mix.
Cook the Fish
  1. Heat the cast iron skillet over medium-high heat. Add butter and olive oil. Once hot, add the seasoned fish fillets.
  2. Cook for about 3-5 minutes on each side, or until the fish is cooked through and has a blackened crust.
Serve
  1. Remove the fish from the skillet and let it rest for a minute before serving. Enjoy with your favorite sides.
