Ingredients

  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 4 oz cream cheese softened
  • ⅓ cup blueberry preserves or jam

Equipment

  • Oven
  • baking sheet
  • parchment paper
  • mixing bowls
  • spatula
  • cookie scoop

Method

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and sugar in a large bowl until light and fluffy.
  3. Add the egg and vanilla, mixing until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Slowly add the dry ingredients into the wet mixture. Mix until just combined.
  5. In a small bowl, beat the cream cheese until smooth.
  6. Gently fold the cream cheese and blueberry preserves into the dough. Swirl lightly with a spatula—don’t overmix! You want visible ribbons.
  7. Use a cookie scoop or spoon to drop dough onto the baking sheet, spacing cookies about 2 inches apart.
  8. Bake for 10–12 minutes, or until the edges are lightly golden.
  9. Let the cookies cool on the pan for 5 minutes, then transfer to a wire rack.
