Ingredients
  

Lamb
  • 3 pounds boneless leg of lamb trimmed and tied
Seasoning
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh thyme chopped
  • 2 teaspoons salt to taste
  • 1 teaspoon black pepper freshly ground
  • 2 tablespoons olive oil for rubbing

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix together the minced garlic, rosemary, thyme, salt, and pepper.
  3. Rub the olive oil over the lamb, then coat it with the herb mixture evenly.
Roasting
  1. Place the lamb in a roasting pan and insert a meat thermometer into the thickest part of the meat.
  2. Roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  3. Remove the lamb from the oven and let it rest for 15-20 minutes before slicing.
Serving
  1. Slice the lamb against the grain and serve with your choice of sides.
