- Place ½ of the butter into a medium saucepan over medium heat. Cook until deep golden brown, about 5-7 minutes, then cool.
- In a medium bowl, whisk flour, instant espresso, baking soda, and salt. Set aside.
- In a stand mixer, cream remaining butter with brown sugar and granulated sugar until light and fluffy, about 5 minutes.
- Beat in vanilla and cooled brown butter until light and creamy, about 2 minutes.
- Beat in the egg and egg yolk for another minute.
- On low speed, add the flour mixture, beating just until incorporated.
- Remove the bowl and give the dough one final stir to incorporate the flour. Fold in chocolate and toffee.
- Scoop dough onto lined cookie sheets and chill for at least 30 minutes.
- Preheat oven to 350°F.
- Sprinkle dough scoops with flaky salt. Bake for 14-16 minutes until edges are golden and centers set.
- Let cookies cool for 10 minutes on parchment before transferring them to a cooling rack.
