Ingredients
  

Base
  • 2 cups cooked rice white or brown
  • 1 can black beans drained and rinsed
  • 1 cup corn canned or frozen
Toppings
  • 1 cup cherry tomatoes halved
  • 1 cup romaine lettuce chopped
  • 1 avocado sliced
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream optional
  • 1/4 cup cilantro chopped
Protein
  • 1 lb chicken breast grilled or sautéed
  • 1 lb ground beef cooked with taco seasoning
Seasoning
  • 1 tbsp olive oil for cooking
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

Prepare the Rice
  1. Cook the rice according to package instructions and set aside.
Cook the Protein
  1. In a skillet, heat olive oil over medium heat. Cook the chicken or ground beef until fully cooked and seasoned with cumin, paprika, salt, and pepper.
Assemble the Bowl
  1. In a bowl, layer cooked rice, black beans, corn, and the cooked protein.
  2. Top with cherry tomatoes, lettuce, avocado, cheese, sour cream, and cilantro.
