Ingredients
  

Soup Base
  • 4 medium potatoes peeled and diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
Spices
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper optional for extra heat
Garnish
  • 1/4 cup green onions chopped
  • 1/4 cup cheddar cheese shredded

Method
 

Prepare the Soup
  1. In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, sauté until translucent.
  2. Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  3. Use a blender to puree the soup until smooth, then return to the pot.
  4. Stir in heavy cream and spices, heating through without boiling.
Serve
  1. Ladle soup into bowls and garnish with green onions and cheddar cheese.
