Ingredients

  • 1.5 cups granulated sugar
  • 0.5 cups water
  • 0.25 teaspoon kosher salt
  • 0.75 cups heavy cream
  • 1 tablespoon cold unsalted butter
  • 6 oz dark chocolate chips optional
  • 1 tablespoon oil optional
  • 6 medium apples washed, sliced
  • 0.5 cups chopped nuts of choice, optional

Equipment

  • Medium Pot
  • microwave-safe bowl
  • parchment paper
  • spatula

Method

  1. In a medium pot, add granulated sugar, water, and kosher salt over high heat, and cook for 5-6 minutes until sugar melts and begins to turn a light caramel color.
  2. Remove the pot from the heat, add heavy cream, and stir constantly until the caramel sauce smooths out.
  3. Turn off the heat and stir in cold unsalted butter until smooth. Transfer the sauce into a container wide enough to fit the apple slices.
  4. In a medium microwave-safe bowl, add dark chocolate chips and oil, microwave for 30 seconds, stir, then repeat until the chocolate is completely melted.
  5. While the caramel is cooling, wash and cut the apples into slices. Toss apple slices in lemon juice to cover them and dry on paper towels.
  6. Dip each apple slice slowly into the caramel, let the excess drip off, and place on a parchment paper-lined baking sheet.
  7. Optionally, add chopped nuts and drizzle melted chocolate over the dipped apples. Enjoy immediately or refrigerate until ready to serve.
