Ingredients

For the Sandwich
  • 4 slices sourdough bread Can substitute with whole grain or gluten-free bread
  • 2 tablespoons unsalted butter Olive oil can be used for a dairy-free option
  • 1 cup grated sharp cheddar cheese Gruyère can be used for a nutty profile
  • 1/2 cup fig jam Any fruit preserve can work in a pinch
For the Caramelized Onions
  • 2 large onions Yellow onions are ideal for sweetness
  • 1 tablespoon olive oil For cooking the onions
  • 1/4 teaspoon salt Aids in drawing out moisture from the onions

Method

Preparation
  1. Slice the onions thinly to help them cook evenly and caramelize beautifully.
  2. Heat olive oil in a skillet over medium heat and add the sliced onions. Cook for about 20-25 minutes, stirring occasionally until golden brown.
  3. Stir in chopped figs once the onions are caramelized and cook for an additional 5 minutes.
  4. Spread butter on one side of each slice of bread.
  5. Layer the caramelized onion and fig mixture onto the unbuttered side of two bread slices, top with cheese, and place another slice on top.
  6. Grill the assembled sandwiches in the skillet over medium heat for about 4-5 minutes per side until golden brown and crispy.
  7. Remove from heat, let cool for a minute, then slice in half and serve warm.
