Ingredients
  

Cauliflower Mash Base
  • 1 head Cauliflower cut into florets
  • 1/2 cup Heavy Cream or milk for a lighter version
  • 4 tablespoons Butter unsalted
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Black Pepper freshly ground
Optional Toppings
  • 2 tablespoons Chives chopped
  • 1/4 cup Parmesan Cheese grated

Method
 

Prepare the Cauliflower
  1. Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until tender, about 15 minutes.
  2. Drain the cauliflower in a colander and let it sit for a few minutes to remove excess moisture.
Mash the Cauliflower
  1. In a blender or using a potato masher, combine the drained cauliflower, heavy cream, butter, garlic powder, salt, and pepper. Blend or mash until smooth and creamy.
  2. Taste and adjust seasoning if necessary.
Serve
  1. Transfer the cauliflower mash to a serving bowl. Top with chopped chives and grated Parmesan cheese if desired.

Notes

For a vegan version, substitute butter with olive oil and heavy cream with coconut milk.
