Ingredients

Glaze
  • 2.5 cups icing sugar powdered sugar
  • 0.25 to 0.33 cups half-and-half or heavy cream
Doughnut Holes
  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 2 tablespoons granulated sugar
  • 0.5 teaspoon salt
  • 30 maraschino cherries very finely chopped
  • 1 large egg
  • 1 cup plus 2 tablespoons buttermilk room temperature
  • 2 tablespoons juice/syrup from maraschino cherries
  • 0.25 cups melted butter cooled to room temperature
  • cups oil for frying

Equipment

  • heavy bottom saucepan
  • slotted spoon
  • Large bowl
  • whisk
  • Rubber spatula
  • Wire rack

Method

Prepare the Glaze
  1. Make the glaze by whisking together the powdered sugar and cream. Set aside.
Mix Dry Ingredients
  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt. Stir in the chopped maraschino cherries.
Mix Wet Ingredients
  1. In a separate bowl, whisk the egg, then add in the buttermilk and cherry syrup/juice and continue whisking.
Combine Ingredients
  1. Pour the pink milk mixture into the flour mixture and fold together using a large wooden spoon or rubber spatula. Finally, stir in the melted butter.
Fry Doughnut Holes
  1. Heat at least 2 inches of oil in a heavy-bottom saucepan or Dutch oven until it reaches 350°F.
  2. Carefully drop spoonfuls (about 1-2 teaspoons in size) of dough into the hot oil, doing about 4-5 doughnut holes at a time. Fry for about 2 minutes, using a fork or spoon to turn the doughnuts over.
  3. Remove the doughnuts from the hot oil using a slotted spoon and place on paper towel to cool. Break one doughnut in half to ensure they are cooked throughout, and adjust frying time as needed.
  4. Allow the oil to come back to 350°F, and repeat the process with the rest of the batter.
Glaze Doughnut Holes
  1. Once the doughnut holes have cooled slightly, dip them in the glaze and then set them on a wire rack to dry.
