Ingredients
  

For the Chicken Caesar Salad
  • 2 cups cooked chicken, shredded rotisserie chicken works well
  • 1 cup romaine lettuce, chopped
  • 1/2 cup Caesar dressing store-bought or homemade
  • 1/4 cup Parmesan cheese, grated plus extra for garnish
  • 1/4 teaspoon black pepper freshly ground
For the Sandwich
  • 4 pieces croissants freshly baked
  • 1 cup cherry tomatoes, halved for garnish

Method
 

Prepare the Chicken Caesar Salad
  1. In a mixing bowl, combine the shredded chicken, chopped romaine lettuce, Caesar dressing, grated Parmesan cheese, and black pepper. Toss until well combined.
Assemble the Sandwich
  1. Slice the croissants in half horizontally. Spoon the Chicken Caesar salad onto the bottom half of each croissant.
  2. Top with halved cherry tomatoes and sprinkle with additional Parmesan cheese. Place the top half of the croissant on each sandwich.
