Chili’s Southwestern Egg Rolls (Copycat Recipe with Avocado Ranch)

A delicious copycat version of Chili's Southwestern Egg Rolls, filled with chicken, black beans, corn, and spices, served with a creamy avocado ranch dressing.

Ingredients
  

Egg Roll Filling
  • 1 cup cooked chicken, shredded
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn, frozen or canned
  • 1/4 cup red bell pepper, diced
  • 1/4 cup green onion, sliced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 pieces egg roll wrappers
Avocado Ranch Dressing
  • 1 ripe avocado
  • 1/2 cup buttermilk
  • 1/4 cup sour cream
  • 1 tablespoon ranch seasoning mix
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • 1/4 teaspoon salt

Method
 

Prepare the Filling
  1. In a mixing bowl, combine shredded chicken, black beans, corn, red bell pepper, green onion, cumin, chili powder, garlic powder, salt, and black pepper. Mix well.
Assemble the Egg Rolls
  1. Place about 2 tablespoons of the filling in the center of each egg roll wrapper. Fold the sides over the filling and roll tightly, sealing the edges with a little water.
Fry the Egg Rolls
  1. Heat oil in a deep fryer to 350°F (175°C). Fry the egg rolls in batches until golden brown, about 3-4 minutes. Remove and drain on paper towels.
Make the Avocado Ranch Dressing
  1. In a blender, combine avocado, buttermilk, sour cream, ranch seasoning mix, lime juice, minced garlic, and salt. Blend until smooth.
Serve
  1. Serve the egg rolls hot with avocado ranch dressing on the side.

Notes

These egg rolls can be baked instead of fried for a healthier option. Preheat the oven to 400°F (200°C) and bake for 15-20 minutes until golden.
