  • 2 tablespoons maple syrup or honey for non-vegan option
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
Toppings
  • 1/2 cup fresh fruit such as berries or mango
  • 2 tablespoons toasted coconut flakes
  • 1 tablespoon nuts such as almonds or walnuts

Method
 

Prepare the Chia Pudding
  1. In a mixing bowl, whisk together coconut milk, chia seeds, maple syrup, vanilla extract, and salt until well combined.
  2. Let the mixture sit for 5 minutes, then whisk again to prevent clumping.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight until it thickens.
Serve
  1. Once the pudding has thickened, stir well and divide it into serving glasses.
  2. Top with fresh fruit, toasted coconut flakes, and nuts as desired.
  3. Enjoy chilled as a refreshing dessert or breakfast.
