Comforting Cabbage Gratin with Parmesan, Ham, and Mushrooms

Ingredients
  

Vegetables
  • 1 large cauliflower
  • 150 g sliced mushrooms
Dairy
  • 500 ml milk
  • 80 g grated Parmesan cheese
  • 40 g salted butter
Meat
  • 4 slices prosciutto
Aromatics
  • 1 clove garlic
  • 3 pieces shallots
  • 6 pieces thyme sprigs
Other
  • 1 tbsp olive oil
  • 60 ml white wine
  • 1/2 piece lemon juice
  • nutmeg

Method
 

Preparation
  1. Cut half of the cauliflower into small pieces and blanch in boiling salted water for 1 minute. Drain.
  2. Chop the remaining cauliflower into small pieces and blend until finely chopped.
Cooking
  1. Melt the butter in a sauté pan, add the garlic and 2/3 of the chopped shallots, and cook over medium heat for 3-4 minutes, stirring continuously.
  2. Add the blended cauliflower, milk, and a pinch of nutmeg. Cook for 10 minutes until reduced and tender.
  3. Transfer to a blender, add 40g of Parmesan, season lightly with salt and pepper, and blend until thick and smooth.
  4. Preheat the oven to broil.
  5. In a hot pan, heat the olive oil and sauté the sliced mushrooms for 3-4 minutes on high heat.
  6. Add the sliced ham, fresh thyme, and remaining shallots, cook for 2 minutes, then add lemon juice and wine.
  7. Mix and cook until the liquid evaporates.
  8. Transfer the mixture to a baking dish and combine with the previously blanched cauliflower pieces.
  9. Spread the cauliflower Parmesan purée over the top, mix gently, add 40g of Parmesan on the surface, and broil for 5-7 minutes.
Serving
  1. Serve warm with a fresh salad.

Notes

Feel free to substitute the ham with cooked chicken or turkey. Different cheeses can also enhance the flavor profile.
