Ingredients
  

Vegetables
  • 2 cups fresh corn kernels can use canned or frozen if fresh is unavailable
  • 1 medium red bell pepper diced
  • 1 medium red onion finely chopped
  • 1 medium jalapeño seeded and minced
  • 1 cup cherry tomatoes halved
  • 1/4 cup cilantro chopped
Dressing
  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon olive oil
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Ingredients
  1. In a mixing bowl, combine the corn, red bell pepper, red onion, jalapeño, cherry tomatoes, and cilantro.
Make the Dressing
  1. In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the corn mixture and toss gently to combine. Serve immediately or refrigerate for up to 2 hours before serving.
