Ingredients

Sweet Potatoes Base
  • 3 pieces sweet potatoes
  • 1 tbsp unsalted butter
  • 0.5 cup shredded gruyere cheese
  • 0.25 tsp dried sage
  • 0.5 tsp Kosher salt
  • 1 crank freshly ground black pepper
Streusel Topping
  • 2 tbsp all-purpose flour
  • 0.5 tsp ground cinnamon
  • 4 tbsp packed light brown sugar
  • 1 pinch table salt
  • 2 tbsp unsalted butter cold and cubed
  • 2 tbsp dried cranberries
  • 0.25 cup candied or glazed pecans roughly chopped
Optional Fried Sage
  • 2 tsp extra-virgin olive oil
  • 6 leaves fresh sage

Equipment

  • Oven
  • baking sheet
  • Medium bowl
  • Small Bowl
  • Frying pan

Method

Preparing the Sweet Potatoes
  1. Preheat oven to 425°F. Pierce the sweet potatoes a couple times on the top and bottom with a fork.
  2. Bake sweet potatoes directly on the middle oven rack for 45 to 50 minutes, until a fork slides in easily. Use aluminum foil to catch juices under the potatoes after 30 minutes.
Making the Streusel
  1. While the potatoes bake, make the streusel by mixing flour, cinnamon, brown sugar, and salt in a small bowl. Cut in cold butter until the mixture is crumbly. Toss in dried cranberries and pecans. Refrigerate until needed.
Assembling and Baking
  1. After baking, remove potatoes from oven, reduce temperature to 400°F, and let cool for 5 minutes. Slice each potato in half.
  2. Scoop out the filling into a medium bowl and mix with gruyere, dried sage, butter, salt, and pepper until completely combined.
  3. Line a baking sheet with parchment paper. Fill potato skins with the sweet potato mixture and top with streusel. Press the topping lightly into the filling.
  4. Bake for about 10 minutes, or until topping is browned. Cool for 5 minutes before serving.
Optional Garnish
  1. For optional fried sage, heat oil in a small frying pan, add sage leaves, and fry for about 30 seconds. Let cool on a paper towel-lined plate. Garnish each sweet potato with a fried sage leaf before serving.

Notes

Feel free to swap out gruyere cheese for cheddar or goat cheese for a tangy twist. Adding apple chunks for extra sweetness is also a nice touch.
