Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.25 tsp salt
Wet Ingredients
  • 0.25 cups milk room temperature
  • 1 large orange zest divided
  • 0.25 cups orange juice freshly squeezed
  • 6 Tbsp unsalted butter softened
  • 0.75 cups granulated sugar
  • 2 large eggs room temperature
Fruit & Glaze
  • 1.5 cups fresh cranberries rinsed and patted dry
  • 0.5 Tbsp all-purpose flour for tossing cranberries
  • 1 cups powdered sugar
  • 1.5 Tbsp orange juice for glaze, adjust as needed
  • 1 tsp orange zest reserved for glaze

Method
 

Baking Instructions
  1. Preheat oven to 350˚F. Butter a 6 cup bread loaf pan, then dust with flour, tapping out the excess flour.
  2. In a medium mixing bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a measuring cup, combine milk, 1 large orange zest (reserve 1 tsp zest for the glaze), and orange juice. Set aside.
  4. In a large mixing bowl, cream together butter and granulated sugar on medium/high speed for 2-3 minutes. Beat in eggs, mixing until well incorporated.
  5. Add flour mixture in 2 parts, alternating with milk mixture and mixing on medium/low speed just until incorporated with each addition. Scrape the sides of the bowl with a spatula as needed.
  6. Toss cranberries with 1/2 Tbsp flour, then fold them into the batter just until incorporated. Spread the batter into the prepared pan.
  7. Bake for 45-50 minutes at 350˚F until golden on top and a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10-15 minutes then run a knife around the edges and transfer the loaf to a wire rack to cool completely before glazing.
  9. To make the glaze: In a separate bowl, stir together powdered sugar, orange juice, and reserved teaspoon of zest until smooth. Adjust consistency as needed with additional orange juice or powdered sugar.

Notes

The bread can be customized with nuts or different fruit types. Store in an airtight container for up to three days or freeze for later use.
