Ingredients

  • 3/4 cup spelt flour
  • 1/3 cup whole spelt flour
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 cup soft brown sugar
  • 3 tablespoons raw cacao powder
  • 1/4 teaspoon vanilla powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cinnamon
  • 1 tablespoon chia seeds
  • 2 large apples peeled and chopped
  • 200 ml organic coconut milk
  • 100 g dark chocolate chopped
  • 1/2 cup chopped roasted hazelnuts
  • cacao nibs to garnish (optional)

Equipment

  • Loaf pan
  • food processor
  • mixing bowl
  • whisk

Method

  1. Preheat the oven to 180°C. Grease a loaf pan with coconut oil and line with parchment paper.
  2. In a bowl, mix all the dry ingredients, except the chocolate and nuts. Whisk to combine.
  3. Place the chopped apples and coconut milk in a food processor and mix until smooth.
  4. Pour the apple sauce over the dry ingredients and stir until just combined. If too dry, add a tablespoon of plant-based milk.
  5. Fold in the chopped chocolate and nuts. Pour the batter into the prepared loaf pan and garnish with cacao nibs and hazelnuts if desired.
  6. Bake for 1 hour, or until a toothpick inserted into the center comes out clean. Check a few times as the melted chocolate may affect the test.
  7. Remove from oven and let cool in the pan for 10 minutes. Then transfer to a cooling rack and let cool completely before slicing.
