Ingredients
  

Dressing
  • 1/4 cup olive oil
  • 2 Tbsp. red wine vinegar
  • 1 Tbsp. grated parmesan cheese
  • 1 clove garlic, finely chopped
  • 1/2 tsp. dried oregano
  • 1/2 tsp. kosher salt
  • 1/4 tsp. ground black pepper
Sandwich Fillings
  • 1 loaf soft Italian bread (about 1 lb.)
  • 1/4 cup mayonnaise
  • 1/4 lb. salami, very thinly sliced
  • 1/4 lb. pepperoni, very thinly sliced
  • 1/4 lb. capicola or ham, very thinly sliced
  • 1/4 lb. mortadella or bologna, very thinly sliced
  • 1/4 lb. provolone cheese, thinly sliced
  • 3 cups shredded lettuce
  • 1 medium tomato, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup black olives, sliced and drained
  • 1/2 cup pickled banana peppers, drained

Method
 

Making the Dressing
  1. In a jar with a tight-fitting lid, combine the olive oil, vinegar, parmesan, garlic, oregano, salt, and pepper. Shake well to combine.
Assembling the Sandwich
  1. Place the loaf of bread on a cutting board, perpendicular to you. With a serrated knife, cut lengthwise through the center of the loaf, almost all the way through the bread.
  2. Hollow out about 1 inch of the inside of the bread, from the top and bottom of the loaf, leaving a 1/2-inch border around the edges.
  3. Spread the mayonnaise on the cut side of the bottom half of the loaf and arrange the salami slices in an even layer.
  4. Repeat with the pepperoni, capicola or ham, mortadella or bologna, and provolone.
  5. Top with the lettuce, tomato, red onion, olives, and banana peppers. Drizzle half of the dressing over the veggies.
  6. Carefully fold the top part of the bread over the top of the veggies.
  7. Place 8 (6-inch) skewers about 1 1/2 inches apart in the sandwich and slice in between the skewers to portion. Serve immediately.
