  • 115 grams Buttermilk
  • 40 grams melted Butter
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • Red gel food coloring Add as needed for desired color
Glaze Ingredients
  • 90 grams Cream Cheese
  • 42 grams soft Butter
  • 1 teaspoon Vanilla Extract
  • 225 grams Powdered Sugar
  • 60 ml Milk Add as needed for consistency

Method
 

Preparation
  1. Preheat the oven to 175°C/350°F and lightly grease the donut pans with cooking spray.
  2. In a medium bowl, whisk the buttermilk, melted butter, eggs, and vanilla until smooth.
  3. In a separate bowl, whisk together the flour, cocoa powder, brown sugar, salt, baking powder, and espresso powder.
  4. Mix the dry ingredients into the wet ingredients in three additions, gently folding with a spatula.
  5. Add the gel food coloring as needed with a toothpick until the desired color is reached.
  6. Pour the batter into a piping bag and divide it between 12 holes in the donut pans.
  7. Bake for ten minutes, then transfer the trays to a wire rack to cool.
Glaze Preparation
  1. While the donuts cool, make the glaze by beating the cream cheese until smooth with a stand mixer or handheld whisk.
  2. Add the vanilla extract and mix again.
  3. Gradually add the powdered sugar and mix by hand until mostly incorporated.
  4. Beat with a mixer until smooth, adding milk as needed. Coloring is optional.
  5. Dip the cooled donuts into the glaze and serve.
