  • 1 teaspoon vanilla extract
  • ⅛ teaspoon ground cinnamon
  • ⅛ teaspoon ground cardamom

Equipment

  • Baking Pan

Method

Making the Dough
  1. Bring the milk to a boil over medium-high heat. Remove from heat as soon as it reaches a boil.
  2. Pour the milk into a large mixing bowl and add the butter. Stir until the butter is melted.
  3. Whisk the sugar into the milk. Wait until the mixture is about room temperature before continuing.
  4. When the milk is around 105-110°F, mix in the yeast and let it sit for 5-10 minutes until foamy.
  5. Add the eggs, salt, and vanilla to the mixture one at a time, whisking to combine.
  6. With the hook attachment on a stand mixer set to a low speed, gradually add the flour 1 cup at a time, mixing for about 5 minutes until the dough is smooth. If sticky, add a bit more flour.
  7. Cover the dough and let it rise in a warm place for 60-90 minutes.
Preparing the Filling
  1. While the dough rises, prepare the filling by heating the butter in a small pan over medium heat, stirring until browned. Allow to cool to room temperature.
  2. Mix the light brown sugar, cinnamon, and cardamom into the browned butter.
  3. Chop the chocolate bar into tiny pieces and set aside.
Rolling and Baking
  1. Once the dough has risen, plop it onto a well-floured surface and fold it into thirds. Flip it over and fold into thirds again, then flatten it into a rectangle.
  2. Roll the dough into a 16x20 inch rectangle.
  3. Spread the filling evenly onto the dough, leaving about 1 inch of empty space along one of the long sides.
  4. Sprinkle the chocolate bits across the filling.
  5. Starting from the filled side, tightly roll the dough toward the empty end.
  6. Cut the rolled dough into 12 even rolls and place them in a 13x9 inch pan lined with parchment paper.
  7. To bake immediately, cover the rolls and let them rise for about 30 minutes while the oven preheats to 350°F.
  8. Bake for 20-25 minutes until the tops are golden.
  9. To bake later, cover the rolls and refrigerate. When ready to bake, let them warm up while preheating the oven to 350°F, then bake for 25-35 minutes until the tops are golden.
Making the Icing
  1. To make the icing, cream together the butter and cream cheese. Add the vanilla, cinnamon, cardamom, and powdered sugar and mix well.
  2. Once the rolls are baked, spread some icing over them immediately while they are warm, then let them rest for about 5 minutes before serving. Add more icing to taste.
