Spinach Cheese Filling
  • 3/4 oz spinach, chopped
  • 5 T Ricotta cheese
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp dried basil
Crisp Base
  • 6 slices Mozzarella cheese for wrapping

Method
 

Preparation
  1. Preheat the oven to 325 degrees.
  2. Mix spinach, ricotta, salt, pepper, and dried basil in a bowl.
  3. Place mozzarella slices on a parchment paper-lined sheet pan and bake for 4 minutes or until pliable.
  4. Drop 1/6 of the spinach and cheese mixture onto one corner of the mozzarella slice, then fold diagonally and seal the edges by pressing down.
  5. Bake for 12-15 minutes until the edges are browned and crispy. Keep an eye on them to prevent oozing.
  6. Let cool for 5 minutes and serve with pasta sauce or plain.
