Ingredients
  

Strawberry Base
  • 1 cup fresh or frozen strawberry halves
  • 1.75 cup creamy non-dairy milk
  • 0.25 cup unsweetened vegan yogurt
  • 2 tablespoons grade A maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon juice of small lemon about 1/2 lemon
  • 1 pinch salt
Oat Mixture
  • 2 cups quick-cooking or rolled oats
  • 2 tablespoons chia seeds or ground flaxseed
  • 0.75 cup diced strawberries

Method
 

Preparation
  1. Make the Strawberry 'Milk': Add the strawberries, non-dairy milk, yogurt, maple syrup, vanilla extract, lemon juice, and salt to a high-speed blender. Blend on high for 45 to 60 seconds, until finely blended.
  2. Mix: In a large bowl, add the oats and chia seeds, then pour in the strawberry milk and add the chopped strawberries. Stir until combined. Let sit for at least 5 minutes.
  3. Store & Serve: Transfer to jars or containers and store in the fridge for at least 4 hours or overnight. Enjoy cold or warm, and store leftovers in the fridge for up to 5 days.
