Method
Prepare the Dough
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, ground Earl Grey tea, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Divide the dough in half, wrap in plastic wrap, and refrigerate for at least 1 hour.
Shape and Bake
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll out one half of the dough on a lightly floured surface to about 1/4 inch thick.
- Use cookie cutters to cut out shapes, and then cut out the center of each shape to create a window.
- Place the cookies on the prepared baking sheets and fill the centers with crushed hard candies.
- Bake for 10-12 minutes, or until the edges are lightly golden and the candy has melted.
- Allow to cool completely on the baking sheet before transferring to a wire rack.
