Prepare Horseradish Cream
- Add all horseradish cream ingredients to a bowl and stir to mix well. Set aside until ready to use.
Toast Baguette
- Preheat the oven on Broil setting.
- Slice the baguette into 12 ½ inch slices.
- Brush both sides of the baguette slices with olive oil and place on a baking sheet.
- Toast the baguette slices for 2 minutes on each side or until golden brown.
- While the toast is still warm, rub the halved garlic clove on one side of each crostini, including the edges.
Cook Steak
- Pat steak dry with a paper towel and season generously with kosher salt.
- Heat a cast-iron skillet over high heat for 5 minutes until smoking hot. Add avocado oil and carefully add the steak.
- After 2 minutes, flip the steak and repeat until cooked to preferred doneness.
- Once the steak reaches 15 degrees below desired internal temperature, add butter, garlic, and rosemary. Baste for two minutes.
- Remove the steak from skillet and place on a wire rack to rest for 6 minutes.
- Slice steak into ½ inch thick slices. Set aside.
Assemble Crostini
- Top each crostini with a slice of ribeye, add a dollop of horseradish cream, and finish with freshly cracked pepper and chives.
