Elote, or Mexican street corn, is a delicious and flavorful dish made with grilled corn on the cob, coated in a creamy sauce, and topped with cheese and spices.

Ingredients
  

Corn
  • 4 ears corn on the cob husked
Sauce
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon lime juice freshly squeezed
  • 1 teaspoon chili powder
  • 1 clove garlic minced
Toppings
  • 1/2 cup cotija cheese crumbled
  • 1 tablespoon cilantro chopped
  • 1 teaspoon lime zest

Method
 

Grilling the Corn
  1. Preheat the grill to medium-high heat.
  2. Place the husked corn on the grill and cook for about 10-15 minutes, turning occasionally, until the corn is tender and has grill marks.
Preparing the Sauce
  1. In a mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, and minced garlic. Mix well until smooth.
Assembling the Elote
  1. Once the corn is grilled, remove it from the grill and brush the sauce generously over each ear of corn.
  2. Sprinkle crumbled cotija cheese, chopped cilantro, and lime zest on top of the sauced corn.
  3. Serve immediately with extra lime wedges on the side.
