Ingredients
  

Pasta and Sauce
  • 10-12 oz. radiatore pasta
  • 2 tbsp. olive oil
  • ½ medium onion, diced
  • 2 large garlic cloves, minced
  • 2 ½ tbsp. tomato paste
  • 1 tsp. dried basil
  • ½ tsp. salt or to taste
  • tsp. red pepper flakes or to taste
  • 1 shot vodka optional
  • 1 cup heavy cream
  • ¾ cup grated Parmesan

Method
 

Cooking Instructions
  1. Bring a large pot of water to a boil and generously season with salt. Add the pasta and cook according to the package instructions (Radiatore usually cooks in 10-11 minutes).
  2. To a large skillet, add the olive oil and onions and cook for about 5 minutes over medium heat until the onions soften.
  3. Add tomato paste, garlic, salt, dried basil, and red pepper flakes. Stir well and cook on low for a minute or two.
  4. Add the vodka and cook for another minute to allow it to evaporate.
  5. Pour in the heavy cream and bring it to a gentle simmer. Stir the Parmesan into it.
  6. Add the cooked radiatore pasta to the sauce and mix well. Use some pasta water to thin the sauce if desired.
