Ingredients
  

Base Ingredients
  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 2 medium potatoes, diced
  • 3 cups fish stock
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Fish
  • 1 pound white fish fillets (e.g., cod, haddock) cut into bite-sized pieces
Garnish
  • 2 tablespoons fresh parsley, chopped for garnish

Method
 

Prepare the Base
  1. In a large pot, melt the butter over medium heat. Add the chopped onion and celery, and sauté until softened, about 5 minutes.
  2. Add the diced potatoes, fish stock, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.
Add Fish and Cream
  1. Stir in the fish pieces and heavy cream. Cook for an additional 5-7 minutes, or until the fish is cooked through.
Serve
  1. Ladle the chowder into bowls and garnish with chopped parsley before serving.

Notes

For a thicker chowder, you can mash some of the potatoes before adding the fish.
