Ingredients
  

Flank Steak
  • 1 pound flank steak trimmed and pounded thin
Filling
  • 1 cup spinach fresh, chopped
  • 1 cup cream cheese softened
  • 1/2 cup feta cheese crumbled
  • 1 clove garlic minced
  • 1 tablespoon olive oil for sautéing
  • 1 teaspoon black pepper
  • 1 teaspoon salt
Optional Garnish
  • 2 tablespoons parsley chopped

Method
 

Prepare the Filling
  1. In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  2. Add spinach and cook until wilted. Remove from heat and let cool.
  3. In a bowl, combine the cooled spinach mixture with cream cheese, feta, salt, and pepper.
Assemble the Pinwheels
  1. Lay the flank steak flat on a clean surface. Spread the filling evenly over the steak.
  2. Starting from one end, roll the steak tightly into a log. Use plastic wrap to help shape it.
  3. Wrap the rolled steak tightly in plastic wrap and refrigerate for at least 30 minutes.
Cook the Pinwheels
  1. Preheat the grill to medium-high heat. Remove the steak from the refrigerator and unwrap.
  2. Slice the rolled steak into 1-inch thick pinwheels.
  3. Grill the pinwheels for about 5-7 minutes on each side or until desired doneness.
  4. Let rest for a few minutes before serving. Garnish with chopped parsley if desired.

Notes

These pinwheels can also be baked in the oven at 375°F for about 20-25 minutes if preferred.
