Ingredients
  

Tortellini
  • 16 oz frozen cheese tortellini
Sauce
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 can diced tomatoes 14.5 oz
  • 2 cups fresh spinach or frozen, thawed
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup grated Parmesan cheese for serving

Method
 

Cook Tortellini
  1. Bring a large pot of salted water to a boil. Add the frozen tortellini and cook according to package instructions, usually about 3-5 minutes. Drain and set aside.
Prepare Sauce
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Add the diced tomatoes (with juice), spinach, oregano, salt, and pepper. Simmer for 5-7 minutes until the spinach is wilted and the sauce is heated through.
Combine
  1. Add the cooked tortellini to the skillet with the sauce. Toss gently to combine and heat through for 2-3 minutes.
  2. Serve hot, topped with grated Parmesan cheese.
