Ingredients
  

  • 2 medium potatoes (Russet or Yukon Gold)
  • 4 tablespoons salted butter ½ stick (55g)
  • 1 clove garlic minced
  • 4 tablespoons freshly grated parmesan ¼ cup
  • 1 tablespoon fresh thyme leaves

Method
 

  1. Preheat the oven to 400F / 200C.
  2. Grease a muffin tin well with oil and place it to one side.
  3. Place the butter and minced garlic in a small pot and heat on low until the butter melts.
  4. Peel the potatoes and cut them into round slices about ⅛ inch thick, then add to a large bowl.
  5. Pour the melted garlic butter over the potatoes and add the parmesan and thyme leaves.
  6. Stack the potato slices in the greased muffin tin and top with any remaining parmesan mixture.
  7. Roast for around 40 minutes until golden brown and the potatoes are cooked through.
