Ingredients
  

Dry Ingredients
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
Wet Ingredients
  • 1 cup zucchini, grated
  • 1/2 cup honey or maple syrup for sweetness
  • 1/4 cup unsweetened applesauce for moisture
  • 2 large eggs
  • 1 teaspoon vanilla extract
Optional Add-ins
  • 1/2 cup nuts or chocolate chips optional

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine all dry ingredients and whisk together.
  3. In another bowl, mix the grated zucchini, honey or maple syrup, applesauce, eggs, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined. Fold in any optional add-ins.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  3. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
