Ingredients
  

Lamb
  • 4 pounds leg of lamb bone-in or boneless
Herb Mixture
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh thyme chopped
  • 2 tablespoons fresh parsley chopped
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together rosemary, thyme, parsley, garlic, salt, pepper, and olive oil to form a paste.
  3. Rub the herb mixture all over the leg of lamb, ensuring it is well coated.
Roasting
  1. Place the lamb in a roasting pan and insert a meat thermometer into the thickest part of the meat.
  2. Roast in the preheated oven for about 90 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  3. Remove the lamb from the oven and let it rest for 15 minutes before carving.
Serving
  1. Slice the lamb against the grain and serve with your choice of sides.
