Homemade Rhubarb Lemonade

Ingredients
  

Rhubarb Base
  • 2 cups chopped rhubarb fresh or frozen
  • 1 cup water for cooking rhubarb
  • 1 cup sugar adjust to taste
Lemonade
  • 1 cup fresh lemon juice about 4-6 lemons
  • 3 cups cold water to dilute

Method
 

Prepare Rhubarb Syrup
  1. In a saucepan, combine chopped rhubarb, water, and sugar. Bring to a boil over medium heat.
  2. Reduce heat and simmer for about 10 minutes until rhubarb is soft.
  3. Strain the mixture through a fine mesh strainer into a bowl, pressing to extract as much liquid as possible.
Make Lemonade
  1. In a pitcher, combine the rhubarb syrup and fresh lemon juice.
  2. Add cold water and stir well to combine.
  3. Taste and adjust sweetness if necessary by adding more sugar or water.
  4. Serve over ice and enjoy!
