Ingredients
  

Soup Base
  • 2 tablespoons olive oil for sautéing
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 pounds fresh tomatoes peeled and chopped
  • 2 cups vegetable broth
  • 1 teaspoon sugar to balance acidity
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon basil dried or fresh

Method
 

Prepare the Soup
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and sauté for an additional minute until fragrant.
  3. Stir in the chopped fresh tomatoes, vegetable broth, sugar, salt, black pepper, and basil. Bring to a boil.
  4. Reduce heat and let simmer for about 20 minutes, allowing the flavors to meld.
  5. Remove from heat and let cool slightly. Blend the soup using a blender until smooth.
  6. Return the blended soup to the pot and heat through. Adjust seasoning if necessary.
  7. Serve hot, garnished with fresh basil if desired.
