Ingredients
  

Greens
  • 1 bunch dandelion greens or any other edible greens
  • 1 bunch chard
  • 1 bunch spinach
  • 1 bunch arugula
Dressing
  • 4 tablespoons extra virgin olive oil
  • 1 lemon juice freshly squeezed
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Prepare the Greens
  1. Wash the greens thoroughly under cold water to remove any dirt or grit.
  2. Trim any tough stems and chop the greens into manageable pieces.
Boil the Greens
  1. Bring a large pot of salted water to a boil.
  2. Add the greens to the boiling water and cook for about 5-10 minutes, or until tender.
  3. Drain the greens in a colander and let them cool slightly.
Serve
  1. Transfer the boiled greens to a serving bowl.
  2. Drizzle with olive oil and lemon juice, and season with salt and pepper to taste.
  3. Serve warm or at room temperature.
