Ingredients
  

  • 2-3 inches Avocado, vegetable or canola oil for frying
  • 1.5 cups apples peeled, cored, and cut into ¼" pieces
  • 1 teaspoons ground cinnamon divided
  • 2 cups all purpose flour
  • cup sugar
  • 2 tablespoons brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 large eggs room temperature preferred
  • 1 cup milk 235 ml
  • 2 tablespoons unsalted butter melted and cooled several minutes
  • 1 teaspoon vanilla extract
  • 1.5 cups powdered sugar
  • 2 tablespoons apple cider plus additional as needed
  • ¼ teaspoon vanilla extract

Method
 

  1. Combine apples and ½ teaspoon cinnamon in a bowl and toss until coated. Set aside.
  2. In a large bowl, combine flour, sugars, baking powder, remaining ½ teaspoon cinnamon, and salt; whisk until well-combined.
  3. In a separate bowl, beat eggs until pale yellow and frothy. Add milk and vanilla extract; whisk together.
  4. Slowly pour melted butter into the wet ingredients while whisking until well-combined.
  5. Pour wet ingredients into dry ingredients and fold together until halfway combined. Add cinnamon-coated apple pieces and continue to fold until just combined.
  6. Fill a Dutch oven or large saucepan 2-3 inches deep with oil for frying. Attach a candy thermometer and heat oil to 360-365°F (175-185°C).
  7. While oil is heating, prepare the glaze by whisking together powdered sugar, apple cider, and vanilla extract until smooth. Set aside.
  8. Once the oil has reached temperature, scoop about 3 tablespoons of batter and carefully drop into the oil. Repeat with 2 more scoops.
  9. Fry each fritter for 60-75 seconds on each side, or until golden brown.
  10. Use tongs to remove fritters to a paper-towel-lined plate and allow to cool briefly before dipping in glaze and transferring to a cooling rack to set.
  11. Enjoy fritters warm the same day for best quality.
