Ingredients
  

For the Meatballs
  • 1 lb ground pork can substitute with ground chicken or turkey
  • 2 cloves garlic minced
  • 1/4 cup fresh cilantro chopped
  • 1 tbsp fish sauce for authentic flavor
  • 1 tbsp sugar balances savory notes
For the Pickled Vegetables
  • 1 cup carrots julienned
  • 1 cup daikon radish sliced thin
  • 1/2 cup rice vinegar for pickling
  • 1 tbsp sugar to balance acidity
For Assembly
  • 1 large baguette light and crispy
  • 1 cup cucumber thinly sliced
  • 1/4 cup sriracha mayo mix mayo with sriracha

Method
 

Prepare the Meatballs
  1. In a large bowl, combine ground pork, garlic, and spices. Mix gently until just combined, then shape into small balls, about 1 inch in diameter.
Bake the Meatballs
  1. Preheat your oven to 400°F (200°C). Place the meatballs on a lined baking sheet and bake for 20 minutes or until they're golden brown and cooked through.
Make the Pickled Veggies
  1. While the meatballs are baking, slice carrots and cucumbers thinly. In a bowl, mix with rice vinegar, sugar, and salt; let them marinate for at least 15 minutes.
Prepare the Sauce
  1. For a creamy spread, combine mayonnaise with soy sauce and a squeeze of lime juice in a small bowl. Set aside to let the flavors meld together.
Assemble the Banh Mi
  1. Slice your baguette lengthwise without cutting all the way through. Spread the mayo mixture inside, then layer in the warm meatballs, pickled veggies, and fresh cilantro.
