Ingredients
  

Vegetables
  • 2 cups chopped tomatoes
  • 1 cup chopped bell peppers any color
  • 1 cup chopped onions
  • 2 cloves garlic minced
  • 2 cups spinach fresh or frozen
Proteins
  • 1 pound chicken breast boneless, skinless
  • 1 can chickpeas drained and rinsed
Grains
  • 1 cup quinoa rinsed
Liquids
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
Spices
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Preparation
  1. Chop all vegetables and set aside.
  2. Rinse quinoa under cold water.
Cooking
  1. In the crockpot, combine chopped tomatoes, bell peppers, onions, garlic, and spinach.
  2. Add chicken breast and chickpeas on top of the vegetables.
  3. Pour vegetable broth and olive oil over the mixture.
  4. Sprinkle oregano, basil, salt, and pepper over the top.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. In the last 30 minutes of cooking, add rinsed quinoa to the crockpot.
  7. Once cooked, shred the chicken and mix everything together before serving.
