Ingredients
  

Mexican Rice
  • 1 cup long-grain white rice rinsed
  • 2 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup tomato sauce
  • 1 cup peas optional
Refried Beans
  • 2 cans pinto beans drained and rinsed
  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 cup vegetable broth
  • 1 cup cheddar cheese shredded
Mexican Street Corn
  • 4 ears corn grilled
  • 1/2 cup mayonnaise
  • 1/2 cup cotija cheese crumbled
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 tablespoon cilantro chopped

Method
 

Prepare Mexican Rice
  1. In a pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
  2. Stir in the rice, cumin, and chili powder, cooking for 2-3 minutes.
  3. Add broth and tomato sauce, bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
  4. Fluff with a fork and stir in peas if using.
Make Refried Beans
  1. In a pan, heat olive oil over medium heat. Sauté onion and garlic until soft.
  2. Add pinto beans and cumin, mash with a fork or potato masher.
  3. Pour in vegetable broth and cook until thickened. Stir in cheese until melted.
Prepare Mexican Street Corn
  1. Grill corn until charred, about 10 minutes. Remove from grill and let cool slightly.
  2. Spread mayonnaise over corn, then sprinkle with cotija cheese, lime juice, chili powder, and cilantro.
