Ingredients
  

For the Chicken
  • 1 pound boneless chicken thighs cut into bite-sized pieces
  • 1 cup buttermilk for marinating
  • 1 cup all-purpose flour for coating
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup vegetable oil for frying
For the Waffles
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon sugar
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons butter melted
  • 1/2 teaspoon vanilla extract
For Serving
  • 1/4 cup maple syrup for drizzling
  • 1 tablespoon chopped fresh parsley for garnish

Method
 

Prepare the Chicken
  1. Marinate the chicken pieces in buttermilk for at least 30 minutes.
  2. In a bowl, mix flour, paprika, garlic powder, onion powder, salt, and pepper.
  3. Heat vegetable oil in a frying pan over medium heat.
  4. Dredge marinated chicken in the flour mixture and fry until golden brown and cooked through, about 5-7 minutes.
Make the Waffles
  1. Preheat the waffle maker.
  2. In a mixing bowl, combine flour, baking powder, baking soda, and sugar.
  3. In another bowl, whisk together milk, egg, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Pour batter into the preheated waffle maker and cook according to manufacturer's instructions until golden brown.
Assemble and Serve
  1. Cut waffles into small squares or circles.
  2. Top each waffle piece with a piece of fried chicken.
  3. Drizzle with maple syrup and garnish with chopped parsley before serving.
