Ingredients
  

For the Focaccia
  • 2 cups All-purpose flour
  • 1 cup Warm water
  • 1 packet Active dry yeast
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
For the Filling
  • 8 ounces Fresh mozzarella cheese
  • 2 medium Sliced tomatoes
  • 1 cup Basil leaves
  • 4 ounces Prosciutto or salami
For the Assembly
  • 2 tablespoons Balsamic glaze
  • 1 cup Pepperoncini peppers

Method
 

Prepare the Dough
  1. In a large bowl, mix warm water, yeast, and sugar. Let it sit for about 5 minutes until bubbly.
Add Ingredients
  1. Stir in flour and salt until combined. Knead on a floured surface for about 10 minutes until smooth and elastic.
Let it Rise
  1. Place the dough in a greased bowl, cover with a cloth, and let it rise for 1 hour or until doubled in size.
Shape the Focaccia
  1. Preheat your oven to 400°F (200°C). Punch down the dough, then divide it into small balls. Flatten each ball into a mini round about ½ inch thick.
Create Dents
  1. Transfer the rounds onto a greased baking sheet and use your fingers to create dimples all over the tops.
Add Toppings
  1. Drizzle olive oil over each dimpled round and sprinkle with sea salt and fresh herbs like rosemary or thyme.
Bake Until Golden
  1. Bake in your preheated oven for 15-20 minutes until golden brown and puffed up.
Assemble Sandwiches
  1. Once cooled slightly, slice each focaccia round in half and fill with your favorite Italian sandwich ingredients.
