Ingredients
  

Green Beans
  • 1 pound fresh green beans trimmed
Miso Sauce
  • 2 tablespoons white miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon honey or maple syrup for vegan option
  • 1 teaspoon water to thin the sauce if needed
Sesame Seeds
  • 1 tablespoon toasted sesame seeds for garnish

Method
 

Prepare the Green Beans
  1. Bring a large pot of salted water to a boil. Add the trimmed green beans and blanch for 2-3 minutes until bright green and tender-crisp.
  2. Drain the green beans in a colander and immediately transfer to a bowl of ice water to stop the cooking process.
Make the Miso Sauce
  1. In a small bowl, whisk together the white miso paste, soy sauce, sesame oil, rice vinegar, honey, and water until smooth.
Combine and Serve
  1. In a skillet over medium heat, add the drained green beans and pour the miso sauce over them. Toss to coat and cook for an additional 1-2 minutes until heated through.
  2. Remove from heat, sprinkle with toasted sesame seeds, and serve warm.

Notes

Feel free to adjust the amount of miso paste based on your taste preference. You can also add garlic or ginger for extra flavor.
