Preparation Steps
- Combine cumin, paprika, chili powder, garlic powder, salt, and black pepper in a small bowl.
- Rub all sides of the chicken breasts with the spice mixture.
- Heat a large skillet to medium-high heat and add olive oil. Brown the chicken breasts in the skillet for 2-3 minutes on each side and set aside.
- Add butter to the skillet, then add onion, jalapenos, and garlic. Sauté for about 3-4 minutes.
- Pour in the heavy cream and chicken broth, then add cream cheese and reduce the heat to low. Stir until the cream cheese melts, about 2-3 minutes.
- Add 1/2 cup of cheddar cheese and stir it in.
- Add the chicken breasts back to the skillet and cover them with the remaining 1/2 cup of cheddar cheese.
- Place a lid on the skillet and simmer over low heat for 6-8 minutes. Remove from heat and garnish with slices of jalapenos on top.

Notes
For extra heat, leave some jalapeno seeds in or use spicy pepper jack cheese instead of cheddar.
