Ingredients
  

Oil and Chicken
  • 1 teaspoon olive oil
  • 1 pound boneless, skinless chicken thighs patted dry
  • salt to taste
  • pepper to taste
Vegetables and Aromatics
  • 1 medium onion diced or grated
  • 1 inch fresh ginger peeled and minced
Cooking Liquids
  • 1 15oz can coconut milk
  • 1.5 cups chicken broth
Grains and Toppings
  • 1.5 cups rice uncooked
  • 0.5 cup unsweetened, finely shredded coconut
  • 2 green onions diced
  • 2 limes
  • 0.25 cup chopped cilantro

Method
 

Cooking Steps
  1. Preheat the oven to 400F.
  2. Heat a drizzle of oil in the Dutch oven over medium to medium-high heat.
  3. Sprinkle salt and pepper over chicken.
  4. Brown the chicken in the oil for 3-4 minutes per side. Remove from the pan and set on a plate.
  5. Add the onion and ginger to the pan. Heat until tender and translucent, about 5 minutes.
  6. Pour coconut milk and broth into the pan and stir to scrape up any browned bits.
  7. Add rice and stir to coat.
  8. Nestle the chicken into the rice mixture and sprinkle with coconut.
  9. Add a tight fitting lid to the pan.
  10. Bake at 400 degrees for 20-25 minutes, or until rice is tender and chicken is cooked through.
  11. Sprinkle green onions and cilantro over all, and then squeeze lime juice over everything. Add salt and pepper to taste.
  12. Serve right away.
