Main Ingredients
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 cups chicken broth low sodium
  • 8 ounces fettuccine pasta uncooked
  • 1 cup heavy cream
  • 1 cup parmesan cheese grated
  • 2 cloves garlic minced
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1/4 cup fresh parsley chopped, for garnish

Method
 

Cooking the Chicken
  1. Heat olive oil in a large pot over medium heat. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
Adding Ingredients
  1. Add minced garlic to the pot and sauté for 1 minute until fragrant.
  2. Pour in the chicken broth and bring to a boil.
  3. Add the fettuccine pasta and cook according to package instructions, stirring occasionally.
Making the Alfredo Sauce
  1. Once the pasta is cooked, reduce the heat to low and stir in the heavy cream and grated parmesan cheese until the cheese is melted and the sauce is creamy.
  2. Adjust seasoning with additional salt and pepper if needed.
Serving
  1. Serve the pasta hot, garnished with chopped parsley.

Notes

For a richer flavor, you can add more parmesan cheese or a pinch of nutmeg to the sauce.
