One-Pot Green Lentil Dal

Ingredients
  

Lentils
  • 1 cup green lentils rinsed and drained
Vegetables
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 medium tomato chopped
  • 1 cup spinach fresh or frozen
Spices
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon salt to taste
Liquid
  • 4 cups vegetable broth
Oils
  • 2 tablespoons cooking oil such as coconut or olive oil

Method
 

Cooking the Dal
  1. Heat the oil in a large pot over medium heat. Add cumin seeds and sauté until fragrant.
  2. Add chopped onion, garlic, and ginger. Cook until the onion is translucent.
  3. Stir in the chopped tomato and cook for another 2-3 minutes.
  4. Add the rinsed lentils, turmeric, coriander powder, and salt. Stir to combine.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 25-30 minutes, or until lentils are tender.
  6. Stir in the spinach and garam masala. Cook for an additional 5 minutes.
  7. Serve hot with rice or naan.
