  • 1 cup all-purpose flour sifted
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
Wet Ingredients
  • 1/2 cup extra virgin olive oil
  • 3 large eggs
  • 1 cup fresh orange juice about 2-3 oranges
  • 1 tbsp orange zest from 1 orange

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Mixing
  1. In another bowl, whisk together the olive oil, eggs, orange juice, and orange zest until well combined.
  2. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
Baking
  1. Pour the batter into the prepared cake pan and smooth the top.
  2. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
